🔪✨How to sharpen your knife – 包丁の研ぎ方 – So schärfst du dein Messer richtig! 🍣 Even if your sushi rice is perfect, 🔸せっかくお寿司がうまく握れても、 🔸Selbst wenn dein Sushi perfekt geformt ist – 🔪 if your knife isn’t sharp, it won’t look. 🔸包丁の切れ味が悪いと、美しく仕上がりません。 🔸Ohne scharfes Messer wird es einfach nicht schön. 1️⃣ Set the tip of your knife to the bottom left. Keep a 15–20° angle. A folded cloth in front helps you keep the angle steady. 🔸包丁の先を左下にセット角度は15〜20度が目安。付近を手前に置くと角度が安定します。 🔸Messerspitze nach unten links setzen. 15–20° Winkel halten. Ein gefaltetes Tuch vorne hilft, den Winkel zu halten. 2️⃣ Slide slowly from the tip toward the grip. Then flip the knife and do the same on the other side. 🔸刃先からグリップに向けて、ゆっくりスライド。終わったら裏返して、反対側も同じように。 🔸Langsam von der Spitze bis zum Griff ziehen. Dann Messer umdrehen und die andere Seite genauso schleifen. 3️⃣ Flip the knife again and sharpen the first side once more. This ensures a balanced and sharp edge. 🔸もう一度裏返して、最初の面をもう一度研ぎます。両面のバランスが整って、よりよく切れるようになります。 🔸Noch einmal umdrehen und die erste Seite erneut schleifen. So wird die Schärfe perfekt ausgeglichen. 💧Rinse with water and wipe – done! 🎥✨ How to Make Matcha 🍵 抹茶の点て方 💚 Save this for later / 保存してね✨ ふくさを右肩から左へ滑らせ、三角に折って帯に差し込みます。動きが整うと、心も静かになります。 🫖 Gently lift and lower the kensui, fold the fukusa, and purify the natsume — the small tea container. 建水を上げ下げし、ふくさを整え、なつめを「こ」の字に清めます。動作ひとつひとつが丁寧に続きます。 🍃 Fold again, no sound this time. Purify the chashaku — the bamboo scoop. ふくさを畳み直し、茶杓を上下・側面と清め、斜めに置きます。 🌿 Now, take out the chasen. Draw the bowl closer and wipe with the chakin in a gentle “二の字”. 茶筅を取り出し、茶巾でお茶碗を「二の字」に清め、平行に置きます。 💧 Pour about 80ml of hot water and start “chasen-tōshi” — the whisk test. お湯を少し注ぎ、茶筅通し。12時、6時、4時と動かしながら、お湯の音に耳を澄ませます。 🍵 Warm the bowl, discard the water, and prepare the chakin again. お茶碗を温めて建水にこぼし、茶巾を整え、中心に置きます。準備が整いました。 💚 Add one and a half scoops of matcha.
